Balsamic Feta Steak Salad

Summer is slowly coming to an end- Why not make the best of it and spend the last few nights outside grilling and making good, fresh food with the family? 

This steak salad can easily transition from summer to fall as it is so easy to change the ingredients and style to fit the season, what your craving or whatever leftovers you have in the fridge! 

Marinade: 

1Lb sirloin steak

2 tablespoons balsamic vinegar

1 tablespoon worcestershire sauce 

¼ cup olive oil 

½ teaspoon dijon mustard 

¼ teaspoon garlic powder 

Dash Salt + Pepper 

Dressing: 

3 tablespoons balsamic vinegar 

½ cup olive oil 

½ teaspoon dijon mustard 

Dash Salt + Pepper 

2 tablespoons parsley chopped 

1 clove of garlic, minced 

1 tablespoon lemon zest 

Salad:

1 cup cherry tomatoes 

½ red onion sliced 

1 head batavia Lettuce - romaine works too 

5 cups mixed spring greens 

2 cups sunflower shoots 

1 cup goat feta

*Optional: Add grilled corn and pine nuts if desired 

How to prepare: 

  1. In a bowl, stir together marinade ingredients. Place steak in a large Ziplock bag and pour marinade over the steaks. Seal and shake until the steaks are well coated. Place in the fridge for 30 minutes 

  2. In a small bowl, whisk together the dressing until well combined. Set aside 

  3. Remove steaks from the bag and place on a grill or pan. Grill both sides to your liking and remove from, setting on a plate. Let rest for 5 minutes and slice thinly against the grain 

  4. Toss together half of the dressing with the mixed greens, lettuce, tomatoes, sunflower shoots and red onion in a large serving bowl. 

  5. Lay steak on top and drizzle with the remaining dressing, sprinkle with feta,  salt + pepper to taste and enjoy!
