Chili Lime Grilled Chicken Tacos

Marinade: 

  • 2 ½ lbs skin on chicken thighs 

  • ½ cup fresh lime juice 

  • 3 teaspoons fresh lime zest

  • ¼ cup olive oil

  • 4 tablespoons fresh cilantro, finely chopped

  • 2 jalapeno, finely chopped *Can adjust to taste 

  • 4 cloves garlic, chopped finely 

  • 1 tablespoon honey 

  • 2 teaspoons salt 

  • 1 teaspoon chili powder - to taste

Pico De Gallo: 

  • 6 roma tomatoes 

  • ½ red onion 

  • ½ white onion 

  • 3 small jalapenos, diced fine* remove seeds for a milder taste

  • 1 lime juiced 

  • Large handful of cilantro, finely chopped

  • Salt + pepper 

Additional: 

  • Tortillas - corn or flour 

  • Salsa

  • Sour cream 

  • Guacamole or avocado chunks 

How to prepare: 

  1. Rinse chicken thighs, leave skin on and pat dry with paper towel. Set aside. 

  2. Combine all ingredients of the Marinade together, mix until well combined.

  3. Place chicken in a Ziplock bag or glass container and pour Marinade over. Combine chicken and marinade and let sit for 30 minutes in fridge 

  4. While the chicken marinades, dice tomatoes, onions and jalapeno. Add into a bowl and season generously with salt, freshly squeezed lime juice and cilantro 

  5. Gently stir and let sit in the fridge. 

  6. Prepare chicken either on the BBQ, oven or skillet. We use the BBQ to soak up the rest of summer! Cook the chicken until the juices run clear. 

  7. Let chicken rest for 5 minutes, slice and build your tacos!
